Recipe of the Week: Miso-Ginger Glazed Salmon


We felt bad about stuffing our faces with delicious skillet-fried chicken on Friday when we were in Indy, so last night, we decided to make a healthier choice for dinner -- salmon! This miso-ginger glaze is the perfect mix of sweet and salty. You dress it up with some scallions (which, amazingly, are still going strong in our garden!) and sesame seeds, serve it over couscous and some vegetables, and you pretty much have an easy, delicious, and satisfying dinner.

Ingredients
2 wild-caught sockeye salmon fillets
1/2 tbsp mirin
1/2 tbsp miso paste
1/3 tbsp brown sugar
1/3 tbsp soy sauce
1/2 tbsp ground ginger
1/4 cup of scallions, chopped
2 tbsp toasted sesame seeds

Directions
Marinate salmon in a mixture of mirin, miso, brown sugar, soy sauce, and ginger for at least 1/2 hour. 
Broil in oven for 10-12 mins or until fish flakes apart easily.
Alternatively, you can also grill the salmon fillets.
